Spicy chicken chili with maple syrup

This chili was a hit. One of my family favorites. Chili is such a great meal that one can do what they like, add whatever your heart desires. It is also a healthy meal that is high in fiber and protein. Add some veggies like corn or a few fresh spinach leaves.

Ingredients:

1 -leek

2 -green onions

5 -cloves of garlic

1 -2 Thai Red chili peppers

1 lb ground chicken

1 can (398oz) beans in maple syrup

1 can (398oz) dark kidney beans

1 can (540oz) black beans

1 can (796oz) diced tomatoes

1 can (398oz) tomato sauce

2 lg brown mushrooms diced

1/2 Tsp chili powder

ground salt & pepper to taste

Recipe:

Lightly brown ground chicken. Dice leek, onion, peppers and garlic in an electric blender.  Add olive oil to chicken and stir in diced mixture, along with sliced mushrooms. Open beans and rinse (except beans in maple). Add cans of tomatoes. Mix in spices. Cook medium heat for 1/2 hr then turn heat to simmer for minimum 1  hr. Shred some cheddar cheese on top, serve with garlic toast if desired. Enjoy!
