Ingredients:

  • 1 package of shirataki noodles, cooked as per instructions, pat dry.
  • 1 pound large shrimp, peeled and deveined
  • 1 medium zucchini, thinly sliced
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1/4 Red Onion thinly sliced
  • 1/4 cup chicken broth or white wine (for deglazing)
  • Juice of 1 lemon
  • Salt and pepper and Lemon Pepper to taste
  • Red pepper flakes (optional, for some heat)
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for garnish)

Instructions:

  1. Heat a large skillet over medium-high heat. Add 1 tablespoon of butter, and once it’s melted and sizzling, add shrimp. Lightly sprinkle with lemon pepper. Cook the shrimp for 1-2 minutes per side or until they turn pink. Remove the shrimp from the pan and set them aside.
  2. In the same skillet, add the remaining tablespoon of butter, minced garlic, onion, and zucchini. Sauté the for about 3-5 minutes or until it becomes tender.
  3. Pour the chicken broth or white wine into the skillet to deglaze it, scraping up any browned bits from the bottom of the pan. Allow the liquid to simmer for a few minutes to reduce slightly.
  4. Add Shirataki Noodles to the skillet.
  5. Return the cooked shrimp to the skillet, add the lemon juice, and season with salt, pepper, and red pepper flakes if desired. Toss everything together and cook for another 1-2 minutes to heat the shrimp through.
  6. Garnish with chopped fresh parsley and, if you like, a sprinkle of grated Parmesan cheese.
