Leftover Pork Chop Broccoli Spaghetti

Discovered this recipe using leftover pork chop, broccoli from the night before. Turned out was a big hit.

Ingredients
  

  • 1/4 C Olive Oil Possibly a bit more as you go
  • 4-5 Cloves Garlic diced
  • 2 tbsp Sliced Green Olives
  • 2 tbsp Kalamata Olives May use Black
  • 2-3 Pork chops Chopped
  • 1/2 C Steamed Broccoli Chopped
  • 1/2 tsp Anchovy Paste
  • 1 tsp Salt & Pepper To taste
  • 2 Tbsp Paprika
  • 450 Grams Spaghetti Noodles

Instructions
 

  • Boil pasta as directed
  • Add olive oil, garlic, olives, anchovy, salt & pepper, and paprika to fry pan to fry for a couple minutes.
  • Add pork chop and broccoli and continue to fry for a cou[ple more minutes until well heated. Add 1/4 cup water or olive juice to keep the mixture from drying out.
  • Drain and add pasta back to the pot. Add sauce mixture and stir well. Serve. Sprinkle with Parmesan Cheese if desired.
